Tea and vanilla are something I'm pretty sure everyone adores at least one of them but what happens if we put them both in one cake? I made an Earl Grey cake with a vanilla sponge cake as the base and topped it off with some buttercream icing made with even more vanilla, cinnamon for comfort and Earl Grey tea. This combination worked really well; it brings comfort while not being too heavy on the stomach for the night, and a perfect finish to a good meal without that much guilt just happiness and relaxation.
Ingredients needed:
- All-purpose flour
- Baking powder
- Salt
- Unsalted butter (softened)
- Granulated sugar
- Eggs
- Vanilla extract
- Earl Grey tea (loose leaf or 2–3 tea bags, finely ground or steeped and cooled)
- Milk or buttermilk
- Fresh or frozen blueberries
- Optional: lemon zest, extra vanilla, or a simple Earl Grey syrup for brushing
Preheat your oven to 350 degrees
In a large bowl, mix together the dry ingredients such as the flour, baking powder and salt, then in a different bowl add the eggs and whisk them with a hand beater until fluffy. While doing this, add in your sugar, then let it mix until it becomes fluffy. While beating the eggs in another bowl, melt the milk and butter in the microwave or heat it on the stove. Then add in the flour mixture to the egg mixture slowly and combine it with the hand mixer on low speed, then in the other bowl pour the hot milk, vanilla add the egg and milk mixture and mix after everything is combined transfer to baking tins; for 30 mins while its baking make a quick icing with butter and sugar in the icing add in around 1 cup of earl grey tea, 1 tablespoon of vanilla and cinnamon and 1 cup of powdered sugar and 1 cup of melted butter once the cake is done put both the cake and icing in the fridge once cooled you can decorate it!
